Our new baker Simone has come up with a delectable dish you can prepare the night before your family brunch. (It’s also a clever way to use up any stale bread you have in the house!) Makes 8 servings.
Serve it with a fresh fruit salad.
You will need:
10 cups stale bread, cubed (sourdough, multi-grain, whatever type you prefer)
10 eggs, lightly beaten
4 cups milk
½ tsp salt
½ tsp black pepper
2 tbsp. Olive oil
1 onion, chopped
1 clove garlic, minced
1 red pepper, chopped
2 cups shredded emmental cheese
1 cup cubed German ham (new in PricePro’s deli department)
What You Do:
Lightly grease a 9×13 baking dish. Heat the olive oil in a frying pan and sauté the onion, garlic and red pepper until soft. Remove from heat. In a bowl, gently toss this vegetable mixture with the cubed bread, half of the shredded cheese, and the cubed ham. Transfer to the greased baking dish.
In the same bowl, pour in the eggs, milk, salt and pepper. Stir to combine and then gently pour over the bread, vegetables, cheese and ham. Push the floating bread cubes down into the liquid.
Sprinkle the remaining cup of cheese on top and cover tightly with plastic wrap. Refrigerate 1 hour or overnight.
Remove the plastic wrap and bake for about 1 hour @ 350F. It should be golden, puffed and firm. Allow to stand 10 minutes before serving.
